Then, in March, we opened both concepts in Austin, we just opened Sushi By Scratch Restaurants in Miami, and most importantly, we welcomed our daughter in April. It’s been a wild ride.”

Sushi By Scratch Restaurant
Sushi By Scratch Restaurants offers a 17-course omakase. Lee’s new wave takes on nigiri and other delicacies from land and sea. Each evening provides three seatings (5 pm, 7:15 pm, and 9:30 pm). They are giving guests an intimate dining experience at one of the ten coveted seats at the sushi counter.
The Sushi By Scratch Restaurant’s journey begins 20 minutes before the scheduled seating time with a complimentary welcome cocktail in the whisky bar before venturing into the dining room. Once seated, guests will be attended to by three chefs and a bartender. As they embark on a progressive tasting journey consisting of strict nigiri, each item is handmade and served as is – no extras, no sidecars of soy sauce or wasabi.
Menu
The ever-changing menu will showcase local fish and seafood. Feature signature dishes like Hamachi painted with a sweet corn pudding and topped with a delicate sprinkle of breadcrumbs made from Kallas-Lee’s famous sourdough, Albacore wrapped in sake-soaked nori and topped with ponzu, fresh wasabi, and crispy onions, as well as Lee’s signature 1-2 punch of Roasted Bone Marrow nigiri seasoned simply with soy sauce, sea salt, and freshly grated wasabi root, followed by fan favorite Unagi that’s fried crispy in the rendered bone marrow fat from the previous course and then dressed in poblano yuzu kosho, soy sauce, ponzu, lemon, and sea salt. All condiments, like soy sauce, vinegar, ponzu, and flavored salts, are made from scratch in-house.
“We’re revered for our inventive flavor profiles at our restaurants,” says Kallas-Lee, “and although some of our nigiri flavor profiles may not be what people expect when they think of traditional sushi, our approach to nigiri is very much traditional.”
“I’ve discovered over the years that a truly exceptional omakase experience is more than who has the best fish,” adds Lee. “I mean, sourcing and technique are important, but a great omakase experience must tell a story and take diners on a journey. From our music selection and mood lighting to our wasabi graters and uniforms, we aim to curate a culinary adventure for guests, bite by bite.”

Price
The beverage program showcases a thoughtful selection of Japanese beer, sake, and whisky. Two beverage pairings are at $110. Option #1 includes three sakes, two micro cocktails, and a beer, and option #2 consists of six pours of sake. Beverages are also available a la carte.
