Hotel San Luis Obispo’s Ox + Anchor Announces Upcoming Winemaker Dinner Series Showcasing Prominent California Wineries
Modern Steakhouse Recently Recognized by Michelin Guide as a Standout Restaurant Along the Central Coast Offers World-Class Wine and Cuisine Experience
Hotel San Luis Obispo,a luxury boutique hotel in the heart of San Luis Obispo's vibrant downtown, announced its winemaker dinner series line up through the fall in partnership with leading California wineries from the Central Coast and Napa Valley.
Executive Chef Ryan Fancher leads it at the property's modern steakhouse, Ox + Anchor. It was Michelin Guide recently recognized as a standout restaurant along California's Central Coast. The series' next installment will take place at 6 p.m. on Tuesday, August 31, with Chamisal Vineyards, the first vineyard planted in the wine destination of Edna Valley. The series will continue with Rusack Vineyards on September 23, Eberle Winery on October 19, Rombauer on October 26, and Margerum on November 9.

Chamisal Vineyards History
In 1973, Chamisal Vineyards planted the first vineyards in Edna Valley by Norman Gross. Solidify its position as a pioneer in the region. They planted the Chardonnay's varietal, and the original site is now home to Chamisal's tasting room and winery. The winery is known for producing world-class Chardonnays from premier sites along California's Central Coast. It includes the winery in Edna Valley, across a range of styles and price points that express a true sense of place. In addition to crafting world-class Chardonnays, Chamisal Vineyards also produces acclaimed Pinot Noirs and Rhone varieties.
Fintan “Fin” du Fresne
In 2006, Fintan "Fin" du Fresne, originally from Wellington, New Zealand, was brought on as head winemaker at Chamisal Vineyards. He follows a sustainable approach to winemaking. That allows the vineyard to be viable on its own and treating each wine individually. Chamisal Vineyards has been SIP (Sustainability in Practice) certified in the vineyards since 2010. It also became the second-ever winery to be SIP-certified in 2016. However, the winery has always gone above and beyond the requirements to maintain the vineyard's health. For example, Chamisal Vineyards exceeds certification requirements with organic practices, like compost teas and cover crops to improve soil health and biodiversity.
Ox + Anchor
Ox + Anchor is one of the hotel's amenities. It is a relaxed fine-dining restaurant that draws inspiration from the hills and sea surrounding San Luis Obispo. A Central Coast native, Fancher has a deep appreciation for the local community, winemakers, and purveyors. His creative dishes will be unique elements of the winemaker dinner series. Working at world-class Wine Country restaurants, he honed a collaborative and intellectual approach to cooking, including Barndiva in Healdsburg.
