Chef Scott Snyder Introduces North African & Middle Eastern Cuisine
To Portland’s Brunch Scene
FOR IMMEDIATE RELEASE (Portland, Ore.) – Levant, a French-Arabesque restaurant serving innovative representations of Middle Eastern dishes on bustling close-in East Burnside Street in Portland, Oregon is launching an all new Sunday brunch menu, available from 10 a.m. – 2 p.m. starting January 25th. Levant’s chef-owner Scott Snyder is serving a truly outstanding brunch menu that features modern interpretations of traditional breakfast foods from regions of the Middle East and Northeastern Africa.
Brunch menu highlights include red and green variations of Shakshuka baked eggs in a tomato-pepper sauce with spices; unique preparations ofFul medames braised fava beans; and an assortment of inspired baked goods like halva croissants, poppy seed and raisin challah, and lemon rose pistachio sticky buns. The delicious Shwarma Spiced Lamb Burger with house made feta singles that is usually only found during happy hour will also have a permanent place on the brunch menu.
Sure to make Levant a go-to for groups, Chef Snyder will offer a family-style meal option for the table which will include a large egg dish and a potato dish, cheeses, olives, bread, a citrus salad, something sweet and other seasonal items from the kitchen, all for just $20 per person.
From behind the bar, classic brunch cocktails like Bloody Mary’s, Ramos Gin Fizz and spiked coffees will get dash of Levantine style, plus modern boozy updates to ancient Middle Eastern beverages like the orchid root-based Sahlab.
Chef Snyder, inspired by his own family and culinary history, highlights traditional North African and Middle Eastern spices and meats using his French technical cooking background. The addition of brunch provides a new and exciting lens through which Chef Snyder can present his exceptional cuisine.

Burnside, Levant is a 50-seat escape with a full bar and an open hearth for cooking rich Middle Eastern cuisine. Chef-owner Scott Snyder, whose family and culinary history inspired him to open Levant, uses his French technical background while cooking with traditional North African and Middle Eastern spices and meats. The menu at the 2,300-square foot, geometrically tiled restaurant reflects old-world flavors, and the restaurant features reclaimed wood and rustic fabrics in blue with brown accents. An open kitchen is surrounded by a beautiful floor-to-ceiling L-shaped bar adorned with a library ladder. Whether its spices, bitters or infusions, the flavors match the anise profile of raki. Such spices work really well with ryes and whiskeys, but the cocktails all pack their own unique punch.
