When you think vegan, you probably don’t think killer macaroni and cheese. I didn’t – but I do now! I recently had the pleasure of attending the Vegan Beer & Food Festival in Portland and it totally blew my mind and wowed my taste buds! Allow me to introduce some of my favorite bites and sips of the day!
Pimento Mac and Cheese from Clean South
Let’s start with that amazing mac and cheese, shall we? I just don't understand how they made this without real cheese! (Mind = blown!) The smoky, pimento flavor put this dish over the top for me.
Chocolate Doughnut with Glaze and Sprinkles from Petunias Pies & Pastries
Who could turn down a chocolate doughnut with glaze and sprinkles? Not me! I promised myself "just a taste" when I bought it - yeah right! I devoured it almost instantly and it took every microfiber of self control I posses not to return to Petunia's and immediately purchase another.
Hell or High Watermelon Wheat Beer from 21st Amendment
Let me just say that I was here for the food, people. I did, however sample a few beers along the way and the watermelon wheat beer by 21st Amendment was truly delightful - crisp, light - the perfect touch of sweetness. I'll be drinking this beer again. Very soon.
Caprese Melt from The Grilled Cheese Truck
The line at the Grilled Cheese Truck was so long. It was so worth it. The Caprese Melt included mozzarella style cheese with ripe tomatoes, fresh basil and balsamic syrup on some of the crunchiest and most delectable french bread; it was a perfect sandwich. And now I'm sad thinking I have to go all the way to LA to enjoy it again (which is where the popular food truck is based).
Chocolate Soft Serve from Kindkreme
Forget everything you thought you knew about ice cream! Turns out it can be utterly delicious without egg or cream (I'm still trying to process this days later). The chocolate "nice cream" was flavorful, creamy - perfect on a warm fall afternoon in Portland!
